MKH's Heritage chicken flock is a cross worth reading about: Exchequer Leghorn females over Egyptian Fayoumi males (a heritage breed that has been raised along the Nile since the pharaohs and studied by Iowa State for disease resistance since the 1940s).
What that means on your plate are pastured Hood County birds with actual flavor, cream-colored eggs with deep gold yolks, and zero antibiotics. The Fayoumi didn't survive 4 thousand years by being fragile!
The pastured Coturnix quail are even more prolific layers of rich, creamy, blue eggs. Lean, fine-grained meat that dresses out in five to six weeks and makes a chef sit up straight! They are, in a word, overachievers.
Both are available now for Spring 2027 reservation at the founding price. Your deposit holds your place and applies to your purchase at pickup. If we miss our date for any reason, your deposit comes back immediately.
In the meantime, the rest of the table is being set. Escargot. Duck eggs. Snail caviar (one of the rarest food products in the world), from Hood County, Texas. + Vetiver slips and biochar for your land! Each product enters the store when its harvest date is confirmed.
